so last night i flaked out and made muffins. reading all of these food blogs has inspired me.
i made banana nut muffins. they’re pretty good and were adapted from this recipe.
* 1 1/2 cups whole wheat flour
* 1 1/2 teaspoons baking powder
* 1/4 teaspoon baking soda
* 1/8 teaspoon salt
* 1 egg
* 1 egg white
* 2 mashed bananas
* 1/2 cup honey
* 1/2 tablespoons vegetable oil
* 1 teaspoon vanilla extract
* 1/2 cup chopped walnuts
preheat oven to 350 degrees. combine dry ingredients except for walnuts. then combine wet ingredients including banana, and add to dry. add walnuts. place in greased muffin pan (i used a non-stick spray), or in a pan lined with muffin cups. bake for 20-25 minutes. it should made a dozen not-too-big muffins.
according to my estimates these muffins have about 163 calories, 4.9 grams of fat, and 4 grams of protein.
i think they turned out well. next time i think i might use almond extract and add another banana. i think you also might be able to cut some of the honey and add applesauce, perhaps 1/2 C. honey and 1/2 C. applesauce.
