muffins part II

as we constantly seem to have overripe bananas begging not to be thrown away, i decided to try and use them up this weekend. going to the store produced a sale on strawberries so we got 4 lovely pounds of them which let me to this recipe for strawberry banana muffins from the joy of baking which appears to warrent further investigation as there seem to be many delicious recipes there.

as usual i altered the recipe a bit so my version is below:

3 large ripe bananas, peeled and pureed
1/2 cup (1 stick) unsalted margerine, melted
1 cup light brown sugar
2 large eggs, lightly beaten
1/2 tablespoon pure vanilla extract
1 cup (that should read 1 heaping cup fresh or frozen blueberries or strawberries (cut into small pieces)
2 1/4 cups (315 grams) whole wheat pastry flour
1 1/4 teaspoons baking powder
1/4 teaspoon baking soda
1 teaspoon (4 grams) ground cinnamon
dash of freshly ground nutmeg

estimated nutritional information per muffin:
calories – 146
fat – 4.5 grams
carbohydrates – 25.5 grams
protein 2.7 grams

for me these made 2 dozen mini-muffins and a dozen regular size. next time i think i’d chop the strawberries much smaller – left them probably between the size of a nickel and a quarter, but next time i think i’ll make them about the size of a penny.
